A night to myself… in the kitchen of course. I find that my new life in Nashville leaves little time for solitaire cooking. And as much as I love my soon-to-be husband, nothing inspires my inner-blogger like a little me time. I left my office tonight practically skipping to the grocery store to stock up on supplies for dinner. Over lunch I had been scrolling through my Facebook news feed and came across a recipe I’d been waiting for.. Polenta with Pepperonata. If you’re like me you subscribe to all kinds of foodie Facebook pages for regular culinary inspiration. I am never without a new recipe to try. This came from Herbivoracious Click the link for recipe. Its a rich sauce made of caramelized onions and roasted red bell peppers over a bowl of savory polenta (aka grits). I added grilled chicken for a well-balanced meal.
I also wanted to share that there has been SO MUCH happening the past six months–from moving and settling, to new jobs, wedding planning and now a new puppy, there is never a dull moment. I have been toying with the idea of reformatting this blog to be more of a family-life focus OR starting a new blog that would allow me to journal our current happenings for family and friends. Thoughts on a clever name for a newlywed blog? Stay tuned!
Also, pictures of our little bugger at the park last weekend. He’s all of four pounds, chihuahua and terrier mix, and oh-so-playful. We are potty training at the moment, and I never thought I’d be one of those moms who squealed when their puppy learned to do his business outside, but I do. I was a little embarrassed when a neighbor walked by and heard me baby talking Winston about what a good potty he made.What are you gonna do?
